Given its properties, Riesling became very popular in all vineyards within the country, only second in terms of area coverage. Riesling wine is difficult to recognise, as it cannot be considered a wine of primary flavour. This wine is known as a dry wine, “clean”, and temperate. If processed carefully, it has a very pleasant aroma. It must be enjoyed particularly as young wine, in the company of fish or various vegetable preparations, but Riesling that is of 2 - 3 years of age also makes an excellent wine. At 6 - 10 years of age, a Riesling wine loses both freshness and savour. This wine is of yellowy green colour, and it is more acidic, temperate, manly, balanced, vital, and refreshing. Its aroma and flavour are reminiscent of Mediterranean fruit. Its taste is similar to peach, with a slight and pleasant bitterness at the end. Given its increased acidity, it is highly recommended for fat fish dishes, poultry and seafood.
